Ingredients

  • 5 cups rolled oats
  • 2/3 cup oil of choice (I've used both canola and coconut oil for this)
  • 1/2 cup honey
  • 1/4 cup brown sugar (optional - use if you prefer a sweeter granola)
  • 3/4 cup roughly chopped walnuts
  • 1 tsp cinnamon
  • 1 cup dried cranberries

Instructions

  • Combine all ingredients except dried cranberries in the crockpot. Leave the lid slightly ajar to allow moisture to escape so granola gets crisp.
  • Cook on high for 2 to 2.5 hours, stirring every 15-30 minutes.
  • When granola is done cooking, stir in cranberries and then transfer to airtight jars or containers. Let sit - it will crisp up a bit while cooling! Enjoy. ?
