Zoodle Mac & Cheese
Craving comfort food, but want something a little more nutritious? This zoodle mac and cheese clocks in at just 310 calories, with 19 grams of protein!
- 1 package Green Giant Zucchini Veggie Spirals
- 1/2 tbsp butter
- 1/2 tbsp flour (if gluten free, use rice flour)
- 2 tbsp milk
- 2 tbsp greek yogurt
- 1/4 cup shredded cheddar
- 1 1/2 tbsp shredded parmesan
- 1/2 tsp spicy mustard
- 1/4 tsp garlic powder
Place Green Giant Zucchini Veggie Spirals on a microwave safe plate. Microwave for 6-7 minutes according to package directions.
Meanwhile, melt butter in a small pot over medium heat. Stir in flour to form a roux.
Reduce heat to low and stir in milk, greek yogurt, cheddar cheese, parmesan cheese, mustard, and garlic powder. Stir until cheese is melted. Turn off heat.
Open package of zucchini noodles and drain water from package. Add zucchini noodles to cheese mixture in your pot and toss a few times until everything is well combined. Enjoy!
The cheese sauce mixture will be thick before adding the zucchini noodles. This is normal. Zucchini retains a high water content even after draining, so when you add the noodles to the pot it will naturally thin out the sauce and everything will come together perfectly.
