Beef Burgers with Mango Salsa

These beef and mushroom burgers topped with mango salsa are the perfect sweet and savory burger combo that you’ll love.

Ingredients

For the mango salsa:

  • 1 large ripe mango, peeled and diced
  • 1 jalapeno, minced
  • 1 tbsp finely chopped red onion
  • 1 tbsp chopped fresh cilantro
  • 1 tbsp lime juice

For the beef patties:

  • 4 oz baby bella mushrooms
  • 1 lb lean ground beef (93/7 or 96/4)
  • 2 tsp Cajun seasoning
  • ¼ tsp salt (see notes)
  • ¼ tsp pepper

For assembling burgers:

  • 5 slices pepperjack cheese
  • 5 whole wheat buns
  • 1 avocado, peeled, pitted, and mashed

Instructions

  • Prepare the mango salsa by mixing together the mango, jalapeno, red onion, cilantro, and lime juice in a bowl. Set aside for now.
  • Finely chop the mushrooms using a mini food processor, or chopping by hand.
  • In a large bowl, combine the ground beef with the chopped mushrooms, Cajun seasoning, salt, and pepper. Form into five patties.
  • Heat a large skillet over medium heat. Add the patties and cook for about 4-5 minutes. Carefully flip the burgers over using a spatula, and cook an additional 4-6 minutes, or until the burger reaches an internal temperature of 160 degrees F.
  • Add a slice of cheese to each and turn off the heat. Let sit for a minute so the cheese melts a bit.
  • Place burgers on the bottom buns. Add a dollop of mashed avocado to each, then divide the mango salsa evenly between the burgers. Place the top bun on the burger and enjoy!

Notes

  • The Cajun seasoning I usually use is relatively low in sodium, so the added salt is useful. However, if your Cajun seasoning contains a lot of salt in it already, you may not need to add additional salt to the patties.
  • I recommend cooking these burgers on the stovetop rather than the grill – they tend to hold together better this way.
