    Beef Burgers with Mango Salsa

    If you love a classic burger – but you want a little variety in your life – it’s time to try this mango avocado burger!  A beef and mushroom patty is seasoned with Cajun spices, then topped off with mashed avocado and a big scoop of mango salsa. It’s big, it’s messy, and it’s delicious! It’s also packed with high quality protein.

    Note: This recipe was originally published in 2018. It has been updated in 2024, as some of the original ingredients were no longer available. The new and improved version is even better!

    Ingredients

    Let’s take a look at what you’ll need for each part of the recipe. You’ll start by making mango salsa, so you’ll need these ingredients:

    Mango, lime, jalapeno, red onion, and cilantro.

    For the beef and mushroom patties, here’s what you’ll need:

    Ground beef, mushrooms, cajun seasoning, salt, and pepper.

    And for assembling the burgers, just a few extra items:

    Buns, cheese, and avocado.

    Here are some helpful ingredient notes:

    • Mango – I like a ripe, sweet mango for this recipe. It balances out any heat in the Cajun seasoning in the burger.
    • Beef – Lean beef, like 93/7 or 94/6, works really well in this recipe.
    • Mushrooms – Adding finely chopped mushrooms to lean beef ensures the patty stays moist and doesn’t dry out, despite the lower fat content in the meat. And it also helps stretch the meat a little further! I usually grab baby bella mushrooms, but white mushrooms work too.
    • Cajun seasoning – I love the subtle heat and flavor this adds to the patties, but you can also make ‘em with just regular ‘ol salt and pepper. Or, you can substitute in some jerk seasoning instead (you may need to alter the amount depending on spice preferences).

    Instructions

    You’ll find the full recipe amounts and instructions in the recipe card below, but here’s a helpful overview with photos and tips.

    Start by preparing the mango salsa. Just mix all the ingredients for that – mango, jalapeno, red onion, cilantro, and lime juice – together in a bowl. Set that aside for now.

    Next, make the burger patty mixture. Chop the mushrooms in a mini food processor (or by hand) until they’re very finely chopped, like this:

    In a mixing bowl, combine the mushrooms, beef, Cajun seasoning, salt, and pepper.

    Make that mixture into patties and cook them on the stovetop. I find it usually takes around 4-5 minutes per side on medium heat to reach the proper cooking temperature of 160 degrees F. Use a meat thermometer to double check!

    When the burgers are just about done, add a piece of pepperjack cheese to each, then turn off the heat. The residual heat from the pan should melt the cheese a bit.

    Recipe FAQ

    Here are some common questions that may come up as you’re preparing this recipe:

    What causes a burger that crumbles?

    Crumbling burgers are often caused by overhandling the patty (and that can also cause tougher burgers). Mix everything together by hand quickly, and then form the patties without much extra fussing. Occasionally, crumbling can also be caused if the ingredients have gotten too warm. If that’s the case, pop the patties in the freezer for a few minutes while your skillet is heating up. This can help them stay together.

    How should you store leftover burgers?

    Store leftover burger patties in the refrigerator for up to 4 days. Store the mango salsa and mashed avocado separately in the refrigerator, and store the buns at room temperature. Note that the avocado may oxidize and turn brown, so you may want to grab an extra one if you’re planning to eat leftovers a few days later. When you’re ready to enjoy leftovers, reheat the burgers in the microwave and assemble as usual.

    Can you use frozen burger patties instead of fresh?

    Sure, if you’d prefer purchasing pre-made burger patties, you can always cook those and just add the mango salsa topping afterwards.

    Can you leave the mushrooms out of this burger recipe if you don’t like them?

    Yes, but I promise – you won’t taste them in this recipe. They don’t offer a noticeable impact on flavor, they simply help add veggies and keep the burgers tender and juicy.

    Dietary modifications

    Here are a few suggested dietary modifications for the recipe if you follow any of these diets:

    • Dairy free diet – Skip the cheese (it tastes just as good without it) and make sure the buns that you choose do not contain dairy.
    • Gluten free diet – Use a gluten free bun or lettuce wrap rather than a whole wheat bun, and be sure to double check that your Cajun seasoning mix is gluten free.
    • Lower calorie diet – Use 96/4 lean ground beef, skip the cheese, and/or look for a lower carb bun (or use a lettuce wrap).

    Nutrition Benefits

    As a dietitian, I’m all about figuring out how to make comfort food into something that offers a little nutrition value. These burgers are a great example, since we’re sneaking some veggies (mushrooms) into the patties, and adding fruit (avocado and mango) as toppings. Using lean beef in the patties is also a great option, as it offers up a ton of high-quality protein.

    This burger is super satisfying and perfect for those days when you’ve been really active and your belly’s telling you “IT’S GO TIME – FEED ME!”.  (No?  Just me?).

    Just combine the burger with a big helping of veggies on the side (like roasted broccoli or sauteed greens) and you’ve got a perfectly balanced meal.

    Ingredients
      

    For the mango salsa:

    • 1 large ripe mango, peeled and diced
    • 1 jalapeno, minced
    • 1 tbsp finely chopped red onion
    • 1 tbsp chopped fresh cilantro
    • 1 tbsp lime juice

    For the beef patties:

    • 4 oz baby bella mushrooms
    • 1 lb lean ground beef (93/7 or 96/4)
    • 2 tsp Cajun seasoning
    • ¼ tsp salt (see notes)
    • ¼ tsp pepper

    For assembling burgers:

    • 5 slices pepperjack cheese
    • 5 whole wheat buns
    • 1 avocado, peeled, pitted, and mashed

    Instructions
     

    • Prepare the mango salsa by mixing together the mango, jalapeno, red onion, cilantro, and lime juice in a bowl. Set aside for now.
    • Finely chop the mushrooms using a mini food processor, or chopping by hand.
    • In a large bowl, combine the ground beef with the chopped mushrooms, Cajun seasoning, salt, and pepper. Form into five patties.
    • Heat a large skillet over medium heat. Add the patties and cook for about 4-5 minutes. Carefully flip the burgers over using a spatula, and cook an additional 4-6 minutes, or until the burger reaches an internal temperature of 160 degrees F.
    • Add a slice of cheese to each and turn off the heat. Let sit for a minute so the cheese melts a bit.
    • Place burgers on the bottom buns. Add a dollop of mashed avocado to each, then divide the mango salsa evenly between the burgers. Place the top bun on the burger and enjoy!

    Notes

    • The Cajun seasoning I usually use is relatively low in sodium, so the added salt is useful. However, if your Cajun seasoning contains a lot of salt in it already, you may not need to add additional salt to the patties.
    • I recommend cooking these burgers on the stovetop rather than the grill – they tend to hold together better this way.

      I’ve never tried mango hummus before, thank you so much for introducing me to it, it sounds fantastic! Stuffed French toast sounds yummy too with it. I’ll be looking out for this next time I go grocery shopping. This is a great idea to change up my burger game! 🙂
