Chocolate Covered Prunes

This 3-ingredient recipe for chocolate covered prunes is easy to make, nutritious, and great for prepping ahead on the weekend!

Ingredients

  • 1 cup dark chocolate chips
  • 20 prunes
  • ½ tsp coarse kosher salt

Instructions

  • Line a plate with parchment paper. Set aside for now.
  • Melt the chocolate in a bowl in the microwave, using 30-second intervals and stirring between each interval. It should only take a few times to fully melt the chocolate.
  • Dip the prunes in the chocolate, fully coating each, and place them on the parchment-lined plate. As you finish every 3-4 prunes, sprinkle those with coarse salt, then continue the process until you finish the entire batch. (This will help ensure the salt sticks to the chocolate before it firms up).
  • Pop in the fridge for about 15-20 minutes, until the chocolate has firmed up. Enjoy!

Notes

  • Do not attempt to skip the interval process of melting the chocolate and stirring each time. It will burn the chocolate if you try to melt it straight through without breaks to stir.
  • The salt measurement is approximate, sprinkle a little on each chocolate covered prune. Also, note that this is coarse salt which is in larger granules than regular table salt.
