    Chocolate Covered Prunes

    These chocolate covered prunes are a sweet treat that are good for your body! You’ll love the blend of sweet chewy prunes with rich dark chocolate, all topped off with coarse sea salt to enhance the flavor. This three-ingredient recipe is easy to meal prep on the weekend and snack on all week long.

    Ingredients

    You only need three simple ingredients for this recipe:

    Prunes, dark chocolate chips, and kosher coarse salt.
    • Prunes: You want pitted prunes – it would be rare to find those with the pits still in them, but worth double checking the label. I used these Sunsweet prunes, but feel free to use whatever is on sale or whatever you have on hand.
    • Chocolate: I recommend dark chocolate for this recipe – it’s rich and pairs perfectly with the prunes. If you prefer reducing the added sugar in the recipe, you could use a stevia-sweetened chocolate like Lily’s instead.
    • Coarse salt: This salt comes in larger granules compared to table salt, and is excellent for topping the chocolate covered prunes. Salt helps enhance other flavors, so it really adds to this chocolate prune combo.

    Instructions

    You’ll find the full recipe amounts and instructions in the recipe card below, but here’s a helpful overview with photos and tips. Luckily, this recipe is incredibly simple!

    Start by putting your chocolate chips in a microwave-safe bowl. Microwave them in 30-second intervals, stirring between each interval. This step is essential – do not try to cook the chocolate straight through without intermittent stirring, or it will burn.

    Once your chocolate is melted, place the prunes in the melted chocolate, turning to coat them completely.

    Place them on a parchment-lined plate. After every few, sprinkle the completed ones with sea salt. Doing this after every few will help the salt stick before the chocolate starts to firm up.

    Repeat with all the prunes until you’re done.

    Place those in the fridge for about 15-20 minutes, or until the chocolate has firmed up completely.

    Enjoy! I like to make a batch on the weekend and store them in the fridge for a quick sweet treat throughout the week.

    Here are some common questions that may come up as you’re preparing this recipe:

    Can you add other toppings or fillings when making chocolate covered prunes?

    Sure! If you want to add a filling, try slicing the prune open and stuffing it with nut butter before coating in chocolate. For additional toppings, you could try finely chopped nuts, crushed freeze dried fruit, or shredded coconut.

    How should you store chocolate covered prunes?

    Store them in the refrigerator for up to a week.

    Can you make this recipe vegan or dairy-free?

    Sure, simply use a vegan-friendly chocolate. Enjoy Life dark chocolate morsels work well for this recipe.

    • Perfectly controlled portion
    • Easy to meal prep on the weekend for dessert throughout the week
    • Provides fiber in each bite, essential for digestive health
    • Supports bone health

    I want to give a little more context to that last bullet point, because this is some new research that has come out over the last couple of years! Here are some study highlights:

    • A 2022 study found that eating prunes daily can prevent bone loss in the hip over 12 months in postmenopausal women.
    • A 2024 study found that eating prunes may have a protective effect on certain bone areas among female oral contraceptive users.
    • A 2022 study found that eating prunes led to favorable impacts on bone turnover biomarkers in men aged 55-80.

    Pretty cool, huh?! And this may be especially important for my runner and track pals, where the prevalence of stress fractures is high (and even higher in female athletes with several risk factors). However, I haven’t seen studies on prunes in these particular populations yet, so can’t say that with certainty.

    This 3-ingredient recipe for chocolate covered prunes is easy to make, nutritious, and great for prepping ahead on the weekend!

    Ingredients
      

    • 1 cup dark chocolate chips
    • 20 prunes
    • ½ tsp coarse kosher salt

    Instructions
     

    • Line a plate with parchment paper. Set aside for now.
    • Melt the chocolate in a bowl in the microwave, using 30-second intervals and stirring between each interval. It should only take a few times to fully melt the chocolate.
    • Dip the prunes in the chocolate, fully coating each, and place them on the parchment-lined plate. As you finish every 3-4 prunes, sprinkle those with coarse salt, then continue the process until you finish the entire batch. (This will help ensure the salt sticks to the chocolate before it firms up).
    • Pop in the fridge for about 15-20 minutes, until the chocolate has firmed up. Enjoy!

    Notes

    • Do not attempt to skip the interval process of melting the chocolate and stirring each time. It will burn the chocolate if you try to melt it straight through without breaks to stir.
    • The salt measurement is approximate, sprinkle a little on each chocolate covered prune. Also, note that this is coarse salt which is in larger granules than regular table salt.
