1 ¼cupsFairlife chocolate milk
⅓cupnatural peanut butter
5.3ozcontainer vanilla Greek yogurti.e. Oikos Pro 20 Gram Protein
1large egg
2cupsKodiak Dark Chocolate Power Cakes pancake mix
½cupdark chocolate chips
Instructions
Preheat the oven to 350°F. Grease a 12-count muffin tin or line it with paper liners.
In a large bowl, mix together the chocolate milk, peanut butter, yogurt, and egg. Whisk until well combined.
Add the Kodiak pancake mix and chocolate chips, and stir until just combined.
Portion the batter out evenly in the muffin tin. Bake at 350°F for 14-17 minutes, or until the muffins are cooked through and a toothpick pulls out clean from the center. (Do not overbake).
Let cool in the pan for 5 minutes, then transfer to a cooling rack to finish. Store in an airtight container at room temperature.
Notes
The batter for this recipe will be thicker than normal muffin batter. However, if it appears excessively thick, add another splash of chocolate milk.
