    Dark Chocolate Kodiak Protein Muffins

    Looking for a sweet treat with a little more nutrition than the average recipe? Try these dark chocolate protein muffins using Kodiak pancake mix! With just six ingredients, these muffins come together quickly and offer the perfect balance of chocolatey goodness with satiating protein (11 grams in each muffin!).

    You may have seen the viral protein muffin recipes floating around social, and this is my personal play on that. Rather than using the Kodiak muffin mix, I stick with the pancake mix since I usually have that in my pantry – and I feel like I can stretch it further than the muffin mix.

    Ingredients

    Here’s a photo of all the ingredients you’ll need – just six! – along with ingredient notes:

    Kodiak pancake mix, Fairlife chocolate milk, yogurt, chocolate chips, egg, and peanut butter.
    • Kodiak Dark Chocolate Power Cakes – This is the pancake and waffle mix. I’m sure you could use other flavors of the power cakes boxes if you’d prefer; they just wouldn’t be as chocolatey as these muffins are. (I also use this dark chocolate mix in my Kodiak double chocolate cookies recipe if you’re looking for something else to make with it!)
    • Fairlife chocolate milk – This is ultrafiltered milk, giving it more protein per cup. It also has less sugar per cup compared to the average chocolate milk brand. However, you can easily substitute with regular chocolate milk (or even plain milk) if you don’t have this on hand.
    • Greek yogurt – I used Oikos Pro vanilla yogurt for this. A single-serve 5.3 ounce cup packs in 20 grams of protein, which is pretty impressive and more than many other brands! You can use any container of vanilla Greek yogurt though that you have on hand.
    • Natural peanut butter – The drippier texture works well in this recipe and incorporates into the batter easier. Teddie’s or Smucker’s Natural are my go-to for brands.
    • Chocolate chips – I used regular chocolate chips for these muffins, but you can certainly use a no-added-sugar chocolate chip (like Lily’s) if you’d prefer cutting the sugar content slightly.
    • Egg – This helps with the structure and rise of the muffins.

    Instructions

    You’ll find the full recipe amounts and instructions in the recipe card below, but here’s a helpful overview with photos and tips. Luckily, this recipe is so easy to make!

    Start by whisking together the chocolate milk, peanut butter, yogurt, and egg in a mixing bowl.

    Once that’s combined, add the Kodiak pancake mix and the chocolate chips, and stir until just combined.

    Portion that out into a muffin tin and bake ‘em at 350°F for about 15 minutes, or until a toothpick pulls out clean from the center.

    Let cool and enjoy! These taste great slightly warm out of the oven.

    Here are some common questions that may come up as you’re preparing this recipe:

    How should you store chocolate protein muffins?

    Store in an airtight container at room temperature for up to 3 days. If you plan to keep them longer than that, freeze for up to 3 months. Remove from the freezer and let thaw at room temperature or pop in the microwave until warm.

    Can you add more mix-ins?

    Sure. Shredded zucchini and carrots, nuts, or dried fruit are all great options to change up these muffins a bit.

    Ingredients
      

    • 1 ¼ cups Fairlife chocolate milk
    • ⅓ cup natural peanut butter
    • 5.3 oz container vanilla Greek yogurt i.e. Oikos Pro 20 Gram Protein
    • 1 large egg
    • 2 cups Kodiak Dark Chocolate Power Cakes pancake mix
    • ½ cup dark chocolate chips

    Instructions
     

    • Preheat the oven to 350°F. Grease a 12-count muffin tin or line it with paper liners.
    • In a large bowl, mix together the chocolate milk, peanut butter, yogurt, and egg. Whisk until well combined.
    • Add the Kodiak pancake mix and chocolate chips, and stir until just combined.
    • Portion the batter out evenly in the muffin tin. Bake at 350°F for 14-17 minutes, or until the muffins are cooked through and a toothpick pulls out clean from the center. (Do not overbake).
    • Let cool in the pan for 5 minutes, then transfer to a cooling rack to finish. Store in an airtight container at room temperature.

    Notes

    • The batter for this recipe will be thicker than normal muffin batter. However, if it appears excessively thick, add another splash of chocolate milk.
    • The nutrition analysis for this recipe assumes use of the ingredients mentioned – i.e. Fairlife chocolate milk and an Oikos pro yogurt cup. You can easily substitute alternatives, like regular chocolate milk and any Greek yogurt – just note that the nutrition facts will vary based on what you use.
