    One Banana Mini Banana Bread

    Ever look over at your counter and notice there’s one sad browning banana sitting there? This is the recipe you need! This one banana mini banana bread is a healthy small batch recipe that makes one mini loaf pan. Great for when you’re craving a sweet treat but want something a bit more nutritious and don’t want to commit to a ton of servings.

    Ingredient Notes

    Kodiak pancake mix, olive oil, vanilla, banana, egg, cinnamon, and maple syrup.
    • Kodiak Pancake Mix – This is key to keeping ingredients minimal (since it already has leavening agents, salt, and protein added to it).
    • Banana – Go for one that has ample brown spots, as those are easier to mash and taste sweeter.

    Mash the banana and mix it with the egg, maple syrup, oil, and vanilla.

    Add the Kodiak pancake mix and cinnamon.

    Pour that into a greased mini loaf pan. Bake for about 30 minutes, or until a toothpick pulls out clean from the center. Let cool in the loaf pan, then enjoy!

    Recipe Tips

    Storage: Store the cooked banana bread at room temperature for up to 2 days, or freeze for up to 3 months.

    Common substitutions: If needed, you can substitute honey for maple syrup and you can substitute avocado oil or melted butter in place of olive oil.

    Add-in ideas: If you want, feel free to mix in ¼ cup of mini chocolate chips, finely chopped nuts, dried fruit, or fresh berries.

    Muffin option: If you prefer, you can divide the batter into three normal-sized muffins (use three wells on a 12-count pan). If baking muffins, the cooking time will be shorter. Start checking at 15 minutes.

    This one-banana mini banana bread is perfect when you need a small batch recipe! Made with Kodiak pancake mix, this recipe also offers a bit more protein than the average banana bread.

    Ingredients
      

    • 1 medium overripe banana, mashed
    • 1 large egg
    • 2 tablespoons maple syrup
    • 2 tablespoons olive oil
    • ½ tsp vanilla extract
    • ½ cup Kodiak Buttermilk Power Cakes flapjack and waffle mix
    • 1 tsp ground cinnamon

    Instructions
     

    • Preheat oven to 350 degrees F. Grease a mini loaf pan.
    • In a medium mixing bowl, combine the mashed banana, egg, maple syrup, olive oil, and vanilla extract. Whisk until well combined.
    • Add the Kodiak Cakes mix and cinnamon. Stir until combined.
    • Pour the batter in the mini loaf pan. Bake on the center rack at 350 degrees F for approximately 27-32 minutes, or until a toothpick pulls clean from the center of the loaf. Let cool in the pan and enjoy!
