Green Bean Quiche

This easy quiche is made with just a handful of simple ingredients! Plus, it’s a relatively healthy quiche, made using milk rather than half and half or cream, and loaded with nutrient-rich green beans.

Ingredients

  • 1 refrigerated pie crust (store-bought or homemade)
  • 5 slices bacon
  • ½ yellow onion, diced
  • 1 ½ cups green beans, ends removed and chopped into 1 inch pieces
  • 2 cloves garlic, minced
  • 5 large eggs
  • ¾ cup 1% milk
  • Pinch salt and pepper
  • 1 cup shredded cheddar cheese

Instructions

  • Preheat oven to 400 degrees F. Place pie crust in glass pie plate and set aside for now.
  • Place the bacon in skillet. Turn heat to medium and cook bacon through, then remove from heat. (I recommend cooking to more on the well done side as you want to be able to chop/crumble this into the egg mixture). Set bacon aside on a paper towel lined plate to cool. When cool, chop or crumble into small pieces.
  • Remove all but about 1-2 tbsp of bacon grease from the skillet. Place skillet with reserved bacon grease back on a burner and turn heat to medium. Add onion and green beans. Cook for approximately 3-4 minutes, or until vegetables start to get a bit tender. Add garlic and cook for another minute. Remove from heat. 
  • In a large mixing bowl, whisk together eggs, milk, and a pinch of salt and pepper. Stir in the crumbled bacon as well as the green bean, onion, and garlic mixture. Finally, stir in the cheddar cheese.
  • Pour this into the prepared pie crust. Bake at 400 degrees F for approximately 35 minutes, or until eggs are cooked through.

Notes

  • If you have leftover green beans that have already been cooked, you can skip adding them in to sauté with the onion.  Instead, just sauté the onion and garlic, and then add the green beans into the egg mixture directly.  You can also use canned green beans if you like in this way.
  • Yes, you really only need just a tiny pinch of salt - the bacon and cheese contain salt so you won't need much! (In fact, sometimes I skip this all together).
  • This recipe makes 8 small servings or 6 larger servings. The nutrition analysis below is based on 8 small servings. You can serve with other accompaniments for a full meal, or double up servings for a full meal.
