Ingredients

For the gazpacho:

  • 4 cups cubed fresh watermelon
  • 3 Roma tomatoes, cored, roughly chopped
  • 1 English cucumber, peeled, roughly chopped
  • 1 medium red bell pepper, roughly chopped
  • 1 jalapeno pepper, seeded, roughly chopped
  • ¼ small red onion, peeled and roughly chopped
  • ¼ cup fresh basil, loosely packed
  • 1 clove garlic
  • 3 tbsp olive oil
  • 2 tbsp red wine vinegar (or sherry vinegar)
  • ¼ tsp salt (or more to taste)
  • ¼ tsp black pepper

Optional for garnish:

  • Avocado, diced watermelon, microgreens, etc.

Instructions

  • Place all of the ingredients for the gazpacho (except the garnishes) in a high-powered blender. Blend until well-combined.
  • Chill for a few hours for the best flavor. Top with any optional garnishes and enjoy.
