    Watermelon Gazpacho

    If peak summer heat has you running from the stove, this watermelon gazpacho is the recipe you need! Traditional gazpacho is a cold soup made from raw blended vegetables, most commonly including tomato. This unconventional version includes watermelon, offering a subtle refreshing sweetness. It’s a tasty chilled soup that’s packed with flavor, and it’s also a great way to support hydration on hot summer days.

    Ingredients & Instructions

    Here’s a photo of all the ingredients you’ll need:

    Watermelon, cucumber, pepper, jalapeno, garlic, basil, onion, tomatoes, oil, vinegar, salt, and pepper.

    You’ll find the full recipe amounts and instructions in the recipe card below – and this recipe couldn’t be easier to make! All you need to do is pop all the ingredients into a high-powered blender, blend until well combined, and chill. Then garnish however you’d like!

    Recipe Tips

    Here are some helpful tips as you’re preparing this recipe:

    Prepping Ahead: Feel free to meal prep in advance! In fact, this often tastes better after chilling overnight as the flavors meld together.

    Storage: Store in an airtight container in the refrigerator for up to 3-4 days. Stir before serving.

    Blender: Ideally, use a high-powered blender as it will create a silky texture. You can use a standard blender, though, just note that the texture may not be as smooth. It will still taste the same!

    Meal Pairings: If you don’t mind turning the oven on, I do love this soup paired alongside gochujang chicken drumsticks – the sweet heat on those goes really nicely with this chilled soup. If you want an easier option, combining this soup with a store-bought rotisserie chicken or some sandwiches makes for a simple summer dinner.

    Ingredients
      

    For the gazpacho:

    • 4 cups cubed fresh watermelon
    • 3 Roma tomatoes, cored, roughly chopped
    • 1 English cucumber, peeled, roughly chopped
    • 1 medium red bell pepper, roughly chopped
    • 1 jalapeno pepper, seeded, roughly chopped
    • ¼ small red onion, peeled and roughly chopped
    • ¼ cup fresh basil, loosely packed
    • 1 clove garlic
    • 3 tbsp olive oil
    • 2 tbsp red wine vinegar (or sherry vinegar)
    • ¼ tsp salt (or more to taste)
    • ¼ tsp black pepper

    Optional for garnish:

    • Avocado, diced watermelon, microgreens, etc.

    Instructions
     

    • Place all of the ingredients for the gazpacho (except the garnishes) in a high-powered blender. Blend until well-combined.
    • Chill for a few hours for the best flavor. Top with any optional garnishes and enjoy.
