    Peach Avocado Toast

    Level up your toast with this delicious recipe! This peach avocado toast checks all the boxes – easy to make, just five ingredients, and packed with flavor. Plus, it packs in about 11 grams of fiber, thanks to the hearty whole grain bread and avocado. Since most people fall short in their daily fiber goals, the dietitian in me loves a simple recipe like this to help get enough!

    Ingredients

    Here’s a photo of everything you’ll need to make this:

    Bread, avocado, peach, chili crisp, and salt on a white background.
    • Bread – Go for a hearty whole grain bread – ideally that has several grams of fiber per slice. I like ALDI’s Simply Nature Graintastic Bread or Dave’s Killer Bread 21 Whole Grains & Seeds option.
    • Avocado – I like the “lil cado” or “mini” avocadoes. I find about half (sometimes a smidge more) is the perfect amount for a slice of toast. That said, you can use regular avocadoes too and use as much as you’d like. I know my son loves a lot of avocado loaded up on his toast!

    Once you’ve got all your ingredients, just toast the bread and spread on mashed avocado. Then add the sliced peach, dollop on the chili crisp, and sprinkle with salt. YUM!

    Adding Protein to Peach Avocado Toast

    If you want to add some protein to this recipe, try mixing some cottage cheese in with the mashed avocado. Alternatively, you can serve this alongside a higher-protein option like scrambled or hardboiled eggs, Greek yogurt, or turkey sausage.

    Changing Toppings

    If you want to change up the toppings here, instead of chili crisp and salt, you can try:

    • A drizzle of regular or hot honey
    • Crushed red pepper flakes or sriracha for other sweet-spicy combos
    • Chopped fresh herbs like basil or mint
    • Crumbled feta for a rich and salty twist
    • Hemp hearts, chia seeds, or chopped nuts for added texture

    Ingredients
      

    • 1 slice hearty whole grain bread (i.e. Simply Nature Graintastic)
    • ½ small avocado (or ⅓ of a large avocado)
    • ½ large peach, sliced
    • 1 teaspoon chili crisp
    • Pinch coarse salt

    Instructions
     

    • Toast the whole grain bread. Mash the avocado and spread it on the bread.
    • Add the sliced peaches, chili crisp, and salt. Enjoy!

    Notes

    • I usually about half of a “lil cado” or the mini avocadoes, or a third of a regular avocado, for this recipe. The nutrition facts below are based on this. Of course, you can use more or less according to your preferences!
    • I like ALDI’s “Simply Nature Graintastic” bread or Dave’s Killer Bread for this recipe. Any hearty bread with at least a few grams of fiber and a few grams of protein is a good option.
