Looking for a delicious and easy breakfast recipe? This pesto burrata toast uses just six ingredients and only takes about 10 minutes to whip up. Think creamy burrata, rich pesto, juicy tomato, and a perfectly fried egg – all on top of crisp toast. A perfect way to start your morning!

- Bread – Sourdough works well for this recipe and adds a great tangy flavor, but you can use any bread for this recipe. If you want to boost the protein and fiber content, choose an option like Dave’s Killer Bread.
- Pesto – I generally use store-bought pesto for this recipe to keep things easy. But feel free to make homemade pesto if that’s your preference! (This recipe works well with my carrot-top pesto.)
- Burrata – Burrata is a soft Italian cheese. It has a soft mozzarella exterior and a creamy center. It works well in this recipe adding a bit of saltiness and richness to the dish.

You’ll find the full recipe amounts and instructions in the recipe card below, but here’s a helpful summary with photos and tips. Fortunately, this recipe is super simple to make!
Start by making your eggs. I like ’em fried with a slightly runny center. I mean, is there anything better than cutting that toast in half and getting that delicious runny yolk? (I know some folks will argue with me on this, haha).
If you want to make them so that you have a slightly runny yolk, heat butter in your skillet, then crack the eggs into the pan and cook for about 2 minutes. Flip and cook for another 30-60 seconds until the egg whites are cooked through.
Of course, if you prefer your yolk to be cooked through, just cook it a bit longer to ensure it’s fully set. You can also choose another egg option for this toast, like scrambled, if that’s preferred. The recipe is flexible.
As your eggs are cooking, toast the bread until it’s a light golden brown, which will provide the perfect texture.
Spread the creamy pesto on each slice of the sourdough toast.
Spread each half on each slice of the toast. Use a fork or knife to mash it a bit and spread evenly.
Add the sliced tomatoes on top of the toast.
Lastly, top with the fried egg and enjoy!
This recipe makes two servings, and you can pair a serving with your favorite side – like some fresh fruit at breakfast or sauteed spinach at lunch. If you’re an athlete with high calorie needs, though, the full recipe may be one serving for you.

You can find burrata at most major grocery stores, either in the dairy section or the fancy cheese section. For example, at Trader Joe’s and Whole Foods it’s usually in the fancy cheese section, while at Target and Star Market it’s usually in the dairy section.
Absolutely! Gluten free bread may provide a different flavor but the recipe will still turn out well. If you are gluten free, also double check that the store-bought pesto is gluten free (occasionally there may be additives that contain gluten, though this is uncommon).
Yes, of course! Olive oil or cooking spray are great to use for fried eggs as well.
If you have leftover store-bought pesto, store it in the refrigerator for up to 1-2 weeks.

Pesto Burrata Toast
Ingredients
- 1 tsp butter
- 2 large eggs
- 2 slices bread of choice (I like sourdough or Dave’s Killer Bread)
- 1 tbsp pesto (store-bought or homemade)
- 6 slices tomato
- 1 ½ oz burrata cheese
Instructions
- In a skillet, heat the butter over medium heat. Crack the eggs in the skillet. Cook for 2 minutes, then flip and cook for another 30-60 seconds, or until the egg whites are cooked through. The egg yolk will still be runny; if you prefer a solid egg yolk, cook for an extra 1-2 minutes per side.
- Meanwhile, toast the two pieces of bread until they are a light golden brown.
- Spread the pesto on each slice of the toast, then spread the burrata on top of that.
- Add the sliced tomatoes and fried egg on top of each piece of toast. Enjoy!
Notes
- I used store-bought pesto for this, which adds plenty of salt and flavor for me. However, you can season with salt and pepper as desired to taste.
