    Peach Ricotta Toast

    This peach ricotta toast is the best way to start your morning in the summer! As a dietitian, I love this toast recipe since it packs in 6.5 grams of fiber and 12 grams of protein. Plus, it’s only 4 ingredients! If you want to make it into a heartier meal, double the recipe, or serve it alongside eggs or yogurt.

    Ingredients and Instructions

    You only need four simple ingredients to make this:

    Whole grain bread, ricotta cheese, a peach, and hot honey, on a white backdrop.
    • Bread – Go for a hearty whole grain bread – ideally that has several grams of fiber per slice. I like ALDI’s Simply Nature Graintastic Bread or Dave’s Killer Bread 21 Whole Grains & Seeds option. If you want a lighter higher-fiber option, Hero is another favorite of mine (that’s an affiliate link and you can save on their breads with promo code CHRISSYCARROLL10).
    • Hot Honey – I love a good sweet and spicy combo, so hot honey is a must-have for me on this! But you can also just do a drizzle of regular honey for the kiddos or for yourself if you don’t want the spice.

    Once you’ve got all your ingredients, just toast the bread and spread on the ricotta. Then add the sliced peach and drizzle with the hot honey!

    Adding Protein to Peach Ricotta Toast

    This recipe contains 12 grams of protein per serving. If you’d like, you can double the portions to reach 24 grams of protein, which is a good amount for breakfast for most people. You could also serve this alongside a higher-protein item like scrambled eggs, hardboiled eggs, Greek yogurt, or turkey sausage.

    Additional Toppings

    If you want to add more toppings to this toast, you can try:

    • Granola
    • Pistachios
    • Fresh herbs like mint or basil for a fresh twist
    • Chia seeds
    • Shredded coconut
    • Prosciutto
    • Arugula
    • Pickled red onions

    Obviously not all of these work together, haha, but giving some suggestions for things to try depending on the flavor direction you want to go. For example, arugula and pickled red onions would go well together in a savory direction, while granola and coconut would also work well in a more sweet direction.

    Ingredients
      

    • 1 slice whole grain bread
    • ¼ cup part skim ricotta cheese
    • ½ large peach, sliced
    • 1 teaspoon hot honey (or regular honey; can be to taste)

    Instructions
     

    • Toast the bread. Spread on the ricotta.
    • Add the peach slices on top and drizzle with the hot honey. Enjoy!
