Oh goodness, I’m on a bit of chocolate overload here. I have been testing healthy brownie batter all week for you guys – I mean, technically this is “work” for me, right? 😉
I came up with this idea when I stumbled across a post from Ryze on Instagram promoting a chocolate recipe contest using their flour. I’ve been really feeling the recipe contests lately since they’re giving me some creative inspiration!
Ryze was one of the products I discovered at the Gluten Free Allergen Friendly Expo last year. I loved the simplicity of this flour blend. Most gluten free flours have a lot of ingredients to try to mimic the structure and taste of traditional all-purpose flour. But the Ryze products are a simple blend of whole grain rice flour and white rice flour – in different proportions depending on the blue bag or yellow bag. Each bag lends itself towards different types of baked goods. I’ve found their two ingredient mixture substitutes very well for AP flour in a variety of recipes!
My first thought was to bake brownies with Ryze, but I quickly thought about how my favorite part of brownies is the batter. Who doesn’t leave a little extra batter in the bowl just so they can eat it as-is when they bake brownies? {No? Is this just me?!}
So rather than baking a whole batch of brownies, I decided to go with a no-bake healthy brownie batter for one. It is a quick and easy recipe that you can throw together in just a few minutes (just seven easy ingredients). And you won’t be tempted to overdo it since it’s a single-serve recipe.

It’s not quite that healthy. But – it is a portion controlled treat that’s incredibly decadent for only 250 calories. And it’s gluten free and vegan, so it fits a lot of common dietary needs. (Plus, no raw eggs = no worries about food poisoning for the kiddos).
I actually tested out several different versions of this brownie batter for one (hence the messy photo below). I’m pretty sure the hubby was actually getting a little irritated with a) my incessant pestering of him to taste yet another healthy brownie batter, and b) the fact that we have a thousand chocolate covered bowls in the sink right now.
While testing, I kept almost all the main ingredients pretty standard across the board. But I tried versions with applesauce, mashed banana, or plain greek yogurt rather than almond butter. In actuality, they were all pretty tasty. However, I felt like the applesauce, banana, and greek yogurt all had slight flavor undertones that detracted from the traditional chocolatey ‘brownie batter’ taste. The almond butter, though, seemed to add a creaminess and richness that enhanced the taste. So I went with this one for my final version.
Next time you’ve got a hankering for chocolate (Did I just say hankering? Am I 95 years old?) – I hope you’ll give this brownie batter for one a whirl!
Healthy Brownie Batter for One (Gluten Free & Vegan)
Ingredients
Ingredients:
- 2 tbsp Rzye gluten free flour (yellow bag)
- 1 tbsp unsweetened cocoa powder
- 1/8 tsp salt
- 1 tbsp maple syrup
- 2-3 tbsp unsweetened almond milk
- 1/2 tbsp almond butter
- 1 tbsp chocolate chips (check labels if GF/vegan – I use Enjoy Life which meet both these needs)
Instructions
Directions:
- Mix all ingredients together in a small bowl. If too thick, add a little extra unsweetened almond milk. Enjoy!

Hahaha, the little bit of almond butter makes it really rich though, so I feel like it’s a perfect filling amount.

Sometimes the hubby will bring my son over to his parents for the day, and that’s my best time to experiment. I can have a ridiculously messy kitchen, photo props everywhere, etc. I clean it all up by the time they get home!

I used oat flour and honey as substitutes because I am not vegan just DF GF and Soy free. This was delicious! Very rich and definitly cured my sweet tooth (for now😂) I hope to one day become a dietitian since I am in 8th grade and I have already been on job shadows with other dietitians.
