Crock Pot Pulled Pork {Serve Over Sweet Potatoes!}

July 5, 2017 by Chrissy Carroll 22 Comments

This crock pot pulled pork puts a healthy spin on a traditional favorite! Pork tenderloin means the meat is leaner, while a homemade Carolina style barbecue sauce means far less added sugar. Use it to make these pulled pork stuffed sweet potatoes, or whatever else you love to do with pulled pork!

I’ve eliminated both of those problems for you…

Slow Cooker Chicken Tikka Masala {Dairy Free!}

June 2, 2016 by Chrissy Carroll 8 Comments

This slow cooker chicken tikka masala has a rich sauce full of flavor from the yogurt and spices. The chicken is tender thanks to using chicken thighs and letting those cook all day in crock pot. And it’s dairy & soy free for anyone with allergies!

We never tasted many different ethnic cuisines growing up.  My mom was a great cook, but we were a typical meat & potatoes or Italian dinner kinda family.  The first time I actually had Indian food was when I worked as a banquet waitress at a Holiday Inn hotel.  The hotel used to host lots…

Slow Cooker Ropa Vieja

After yoga class with my friend Lori the other night, she mentioned she didn’t have anything planned at home for dinner.  I asked if she wanted to pop over to our place afterward since I had a lot in the slow cooker.  When she asked what we were having, I responded with “well, it’s kind…
