    Watermelon Ricotta “Pizza” Slices

    If you’re in the mood for a refreshing and nourishing summer snack, definitely try these watermelon ricotta “pizza” slices. No, it’s not a piping hot ‘za right out of the oven. Yes, it’s just watermelon cut into triangles with toppings. But hey – let’s just roll with the name, mmk? 😉

    Why You’ll Love This Recipe

    As a dietitian, here’s why I love this snack for active women:

    • Provides fitness-fueling carbohydrates to give you energy for workouts
    • Has 8.5 grams of protein to support satiety and muscle health
    • Good source of calcium (for bone health), magnesium (many roles in the body), and potassium (an electrolyte lost in sweat)
    • Excellent source of Vitamin C (to support immune health)
    • Super tasty!

    Ingredients & Instructions

    You only need a few simple ingredients to make this recipe:

    Watermelon, blueberries, ricotta, almonds, and honey.

    Once you’ve got those, just layer the ricotta on the watermelon and top with the blueberries, almonds, and drizzle of honey. YUM!

    Quick tip: If you want to make this a plant-based recipe, feel free to skip the ricotta and use a dairy-free coconut yogurt instead, and just leave off the honey (or use a drizzle of maple syrup).

    Ingredients
      

    • 2 large slices watermelon
    • ¼ cup part skim ricotta cheese
    • ⅓ cup blueberries
    • 1 tbsp slivered almonds
    • 1 tsp honey

    Instructions
     

    • Spread the ricotta over the watermelon slices. Add the blueberries and slivered almonds on top. Drizzle on the honey, and enjoy!
