    Watermelon Yogurt Parfait

    Need a cold treat to cool you down on a hot summer day? Try this watermelon parfait! Made with just three simple ingredients, this snack is easy to whip up in just a few minutes. And it’s a nutritious option for your body, packed with about 13 grams of protein (great for active women!).

    Ingredients and Instructions

    You only need three ingredients – here’s what to grab:

    Yogurt, coconut, and diced watermelon on a white backdrop.
    • Watermelon – I always buy a big melon then chop it up and store it in the fridge so it’s ready to use in snacks, desserts, and more throughout the week. This is also quite cost effective. You can buy pre-chopped if it’s easier though!
    • Coconut-flavored Greek yogurt – Any brand will work! You can grab the 5.3-ounce cups for making single-serve parfaits, or you can grab a larger tub if you’re making multiple servings.
    • Shredded coconut – This adds texture and flavor to the parfait.

    Once you’ve got those, just layer them into a jar! Alternate between the watermelon, yogurt, and coconut until you’ve used up all the ingredients.

    Here are some common questions that may come up as you’re preparing this recipe:

    Can you use other types of yogurt for a parfait?

    Yes, you can use any type of yogurt you prefer – however keep in mind that it may affect the nutrition facts and texture. Greek yogurt works well due to its thick and creamy texture and high protein content, but you can also use regular yogurt, or plant-based alternatives like coconut yogurt or almond yogurt for a vegan version.

    Can you make a watermelon parfait ahead of time?

    While you can chop and measure the ingredients in advance, it’s best to prepare the watermelon parfait just before serving. If you prepare it ahead of time, the juices from the watermelon can thin the yogurt and affect the texture.

    Can you add other toppings to a parfait?

    Yes! Additional topping ideas include granola, nuts, cacao nibs, pumpkin seeds, crushed graham crackers, and other fruit.

    Can you freeze a yogurt parfait?

    Yogurt parfaits are best enjoyed fresh, as freezing can affect the texture of the yogurt and fruit upon thawing.

    • Provides protein – It’s smart to include protein in your snacks, as it’s satiating – meaning it helps you stay full after eating. Protein is also key for muscle repair and recovery after workouts.
    • Contains calcium – This snack contains 12% of your daily calcium needs, which is key for bone health.
    • Contains B12 – Vitamin B12 is essential for nervous system function, energy production, and red blood cell formation, so it’s definitely important to get enough each day. This recipe provides 36% of your daily needs.

    • 5.3 oz container of coconut-flavored Greek yogurt
    • 1 cup diced watermelon
    • 1 tbsp shredded coconut

    Instructions
     

    • Layer ingredients into a mason jar, alternating between the watermelon, yogurt, and shredded coconut. Enjoy!

    Notes

    • You can substitute vanilla-flavored yogurt for coconut-flavored yogurt if you prefer, though I think coconut tastes the best!
